Wheat

It is the most cultivated cereal in the world. Basically it is divided into two varieties: durum wheat , used for making pasta, and soft wheat used in bread-making. The region Puglia is often referred to as Italy’s granary because of its vast cultivated fields of durum wheat. The wheat grain is rich in essential oils which are mainly contained in the wheat germ.

Wheat owes its great success to the fact that it is so easy to use. It does not have a husk, it is easy to grind and a range of different flours can be obtained from it. Many types of wheat found on the market have undergone modifications or alterations. Wheat is without a doubt the cereal which has been treated more than any other. Radioactive bombings, high energy photon contamination, X-ray contamination, etc, are just a few of the "treatments" that the cereal has undergone in order to achieve "improved" selections.

The use of old strains of wheat, even considering their production limits, their problems related to rain resistance and bending to the ground under heavy rain, seems to us to be the only way to go. We have managed to conserve and preserve several old varieties of both durum and soft wheat for future generations which we believe need to be re-evaluated.
