Millet
It is without any doubt the most widely used cereal grain in Asia and Africa. In Europe the millet plant is over 1 metre tall, with yellow, red seeds. In Africa it grows to a height of more than 2 metres, with large seeds compared to the European strain. It is particularly suited for toddlers because of its small grains; it is easily digestible, is good for the liver and excellent during convalescence from debilitating illnesses.
It is rich in trace elements, such as magnesium, silicon, manganese, iron, and Vitamins A and B. Its protein level is higher than 10% even if it is lacking in lysine. It boasts 3-4% of lipids. Its richness in vitamin A makes it a good defence against infection. In general millet assists in maintaining neurons, in blood regeneration, and bone calcification.
