Basmati rice is an Indian variety of rice. The name means ''queen of fragrance'', indicating its characteristic fragrance and delicate flavour. The grains are long and narrow and become even longer when cooked, but remain firm and well separated, and compared to other varieties, are not sticky. Ideal for rice salads, oriental recipes and side dishes.
